Interesting topic. I like my racing games like I like my breasts: fake and unrealistic. That being said, some of my favorites are the tracks from F-Zero X on the N64 with its loops and crazy mechanics. The opening F-Zero track on the SNES is pretty iconic as well. It's not a conventional racing game, but Uniracers on the SNES has some crazy fun tracks. If you haven't looked at Uniracers, I highly recommend you check it out, it's not a standard racing game, but it's something that had never been done before, and really hasn't been done since.
